2016 GIV Cabernet Franc
This Cabernet Franc sits with a slightly off north/south row orientation that allows for perfect sun exposure to ripen the grapes. The block sits in a slightly sandy soil and has perfect ripening conditions that create small, darkly colored berries with intense varietal character. The vines are on a bilateral vertical cane pruned system.
These grapes were harvested in mid october at 25 brix. They were hand harvested and delivered to the winery in half ton macro bins. We destemmed the fruit into bins and started fermentation immediately. The grapes fermented moderately quickly with thorough oxygenating punchdowns to help with tannin polymerization. After the grapes were pressed, they were aged in 25% new french oak barrels.

This is amongst the best stand alone California cab franc I've ever had. If you are not familiar with cab franc, you have to try it.
