2015 GIV Cabernet Franc
The wine pours a dusty brick color with a hint of darker amethyst. The bouquet opens with a note of cranberry compote and herb de provence. As the wine opens up, hints of lavender, choclate, and tobacco are interwoven through a tapestry of rich oak notes and cherry fruit. The palate is weighty with very soft tannins and a marked note of minerality. The finish is persistent with coffee, cedar, and char.
These grapes were hand picked and delivered in half ton macro bins and were gently destemmed to minimize fruit damage. The fermentation was started with a proprietary yeast blend. After aging for 18 months in a blend of new and 2 vintage old french oak barrels. The wine was not fined or filtered prior to bottling. 120 cases were produced.
